# Chocolate Peanut Date Bars

You only need 5 ingredients to make the most delicious chocolatey treat! These Chocolate Peanut Date Bars are super easy to make and SO ADDICTIVE! But don’t worry, they are secretly healthy-ish so you can eat them all (okay, maybe just a couple).

To make these vegan chocolate bars I used good quality dark chocolate 70% (you can use sugar-free chocolate) and I added peanut butter, peanuts and chewy dates. The result is crunchy, nutty, rich and chocolatey. SO SO GOOD!

They are perfect for when you are craving something sweet and indulging. And you’ll still be getting some amazing nutrients. Did you know cacao is packed with antioxidants? It can also improve your mood, your energy and your mental performance. Wooohooo. And did you know dates are super high in fiber? Or that peanuts are rich in micronutrients and a good source of plant-based protein? And so much more. Best of all, these foods are delicious when paired together. Who doesn’t love a chocolate-peanut butter combo?

These chocolate bars can be a vegan dessert or a great satisfying snack. They are travel-friendly and kids-friendly. You can store these chocolate bars in the fridge for up to two weeks or freeze them for up to a month (or even more).

## Chocolate Peanut Date Bars

These heavenly Chocolate Peanut Date Bars are vegan, easy to make and so incredibly delicious. A great healthy dessert or satisfying snack!

### Ingredients

- 7ozor 200 grams dark chocolate,roughly chopped – I used 70 %
- 1cuproasted, unsalted peanuts
- ½cupdates,finely chopped – the size of a pumpkin or sunflower seed
- ⅓cuppeanut butter
- 2Tbspcoconut nectar or maple syrup

### Instructions

- Place chocolate in the microwave for 30 seconds on medium power. Stir and repeat until 70 – 80 % of the chocolate is melted, the rest will melt as you stir. Be careful not to overheat the chocolate, it will ruin the taste and texture.
- While the chocolate is melting, place peanuts in a food processor and pulse until they are finely chopped (I like very small pieces).
- Once the chocolate is melted, add peanut butter and coconut nectar/maple syrup and whisk until combined.
- Add peanuts and dates. Stir to combine.
- Transfer the chocolate mixture to a parchment-lined loaf pan. Press the mixture down using a spatula, press into an even layer.
- Place in the fridge for 60 minutes before lifting it out of the pan and chopping them into bars (or squares).
- Enjoy!
- Store leftovers in an airtight container. You can also store these in the fridge for up to two weeks (or freeze them for up to a month or more).
