Smashed Pea Toast

This easy, wholesome and super tasty vegan breakfast is also protein-packed, fiber-packed, oil-free and can be gluten-free. It’s a seriously delicious whole foods plant-based meal you’ll be making on repeat.

Servings 2 medium toasts

Ingredients
  

SMASHED PEAS:

  • 1 Cup frozen peas thawed
  • 1 Tbsp tahini
  • 1 Tbsp lemon juice
  • Big pinch garlic powder
  • Big pinch sea salt

TO SERVE:

  • 2 slices of whole-wheat or GF bread

Instructions
 

  • Add all ingredients to a medium bowl and mash with a fork until you have a chunky paste.
  • Spread on top of your favorite slice of bread.
