Creamy Beet Berry Smoothie
Ingredients
- 2 cups frozen blueberries – or mixed berries
- 1 medium/big cooked beet*
- ¼ cup cashews, soaked overnight**
- 1 Tbsp chia seeds
- 1 ½ cup unsweetened almond milk – or more, depending on how thick you like it
- 2 tsp coconut nectar or maple syrup
- ½ tsp pure vanilla extract
Instructions
- Add all ingredients to a high-speed blender and blend until smooth and creamy.
- Enjoy!
Notes
** You could use raw, unsoaked cashews if you have a good high-speed blender, but soaking nuts overnight makes them a whole lot healthier (you can read more about it here).
