Creamy Beet Berry Smoothie

Creamy, satisfying and delicious Beet Berry Smoothie. This smoothie is an antioxidant bomb! So healthy and nutritious, it’s the perfect way to start your day!
Prep Time 5 minutes
Soaking Time 8 hours
Servings 2

Ingredients
  

  • 2 cups frozen blueberries – or mixed berries
  • 1 medium/big cooked beet*
  • ¼ cup cashews, soaked overnight**
  • 1 Tbsp chia seeds
  • 1 ½ cup unsweetened almond milk – or more, depending on how thick you like it
  • 2 tsp coconut nectar or maple syrup
  • ½ tsp pure vanilla extract

Instructions
 

  • Add all ingredients to a high-speed blender and blend until smooth and creamy.
  • Enjoy!

Notes

* Cooked beets make this smoothie super creamy. I haven’t tried it with raw beets, but I’m quite sure it will still taste great. Just be sure you have a good high-speed blender if you are going to use raw beets.
** You could use raw, unsoaked cashews if you have a good high-speed blender, but soaking nuts overnight makes them a whole lot healthier (you can read more about it here).
