Creamy Beet Berry Smoothie

This smoothie is so thick and creamy and delicious!

And look at that gorgeous color! That’s all the powerful antioxidants.

I love the combination of tart, juicy berries with sweet, earthy beets. I also added cashews and chia seeds for creaminess and a healthy dose of fats and plant-based protein. The result is a truly delicious blend of flavors with an incredible array of health benefits. In other words, it’s the perfect healthy breakfast.

Adding nuts and seeds to smoothies is a game changer. Yes, they boost nutrition, but they also make your smoothies way more satisfying, so they’ll keep you full and energized for hours.

Creamy Beet Berry Smoothie

Creamy, satisfying and delicious Beet Berry Smoothie. This smoothie is an antioxidant bomb! So healthy and nutritious, it’s the perfect way to start your day!
Prep Time 5 minutes
Soaking Time 8 hours
Servings 2

Ingredients

  • 2 cups frozen blueberries – or mixed berries
  • 1 medium/big cooked beet*
  • ¼ cup cashews, soaked overnight**
  • 1 Tbsp chia seeds
  • 1 ½ cup unsweetened almond milk – or more, depending on how thick you like it
  • 2 tsp coconut nectar or maple syrup
  • ½ tsp pure vanilla extract

Instructions

  • Add all ingredients to a high-speed blender and blend until smooth and creamy.
  • Enjoy!

Notes

* Cooked beets make this smoothie super creamy. I haven’t tried it with raw beets, but I’m quite sure it will still taste great. Just be sure you have a good high-speed blender if you are going to use raw beets.
** You could use raw, unsoaked cashews if you have a good high-speed blender, but soaking nuts overnight makes them a whole lot healthier (you can read more about it here).
