Cauliflower is one of my favorite vegetables. It’s super healthy, versatile and delicious. Okay, you may not think it’s delicious, but please give this recipe a try, you might actually change your mind. This mashed cauliflower is buttery (no butter, though), creamy, light and so damn good! I added a few spices and a little coconut milk and the end result tastes beyond amazing.
I’ve been making this recipe for the past 5 or 6 years, I like the blend of flavors so much I haven’t felt the need to try another combination.
I love the addition of aromatics like onions and garlic, the delicate sweetness from the coconut milk and the subtle hint of spices. It’s scrumptious and super healthy. This mashed cauliflower is vegan, paleo and keto. Better yet, it’s full of health benefits.
