Place chocolate in the microwave for 30 seconds on medium power. Stir and repeat until 70 – 80 % of the chocolate is melted, the rest will melt as you stir. Be careful not to overheat the chocolate, it will ruin the taste and texture.
While the chocolate is melting, place peanuts in a food processor and pulse until they are finely chopped (I like very small pieces).
Once the chocolate is melted, add peanut butter and coconut nectar/maple syrup and whisk until combined.
Add peanuts and dates. Stir to combine.
Transfer the chocolate mixture to a parchment-lined loaf pan. Press the mixture down using a spatula, press into an even layer.
Place in the fridge for 60 minutes before lifting it out of the pan and chopping them into bars (or squares).
