Chocolate Peanut Date Bars

These heavenly Chocolate Peanut Date Bars are vegan, easy to make and so incredibly delicious. A great healthy dessert or satisfying snack!

Ingredients
  

  • 7 oz or 200 grams dark chocolate, roughly chopped – I used 70 %
  • 1 cup roasted, unsalted peanuts
  • ½ cup dates, finely chopped – the size of a pumpkin or sunflower seed
  • cup peanut butter
  • 2 Tbsp coconut nectar or maple syrup

Instructions
 

  • Place chocolate in the microwave for 30 seconds on medium power. Stir and repeat until 70 – 80 % of the chocolate is melted, the rest will melt as you stir. Be careful not to overheat the chocolate, it will ruin the taste and texture.
  • While the chocolate is melting, place peanuts in a food processor and pulse until they are finely chopped (I like very small pieces).
  • Once the chocolate is melted, add peanut butter and coconut nectar/maple syrup and whisk until combined.
  • Add peanuts and dates. Stir to combine.
  • Transfer the chocolate mixture to a parchment-lined loaf pan. Press the mixture down using a spatula, press into an even layer.
  • Place in the fridge for 60 minutes before lifting it out of the pan and chopping them into bars (or squares).
  • Enjoy!
  • Store leftovers in an airtight container. You can also store these in the fridge for up to two weeks (or freeze them for up to a month or more).
