1.3poundsor 600 grams of cauliflower,roughly chopped*
1medium yellow onion,roughly chopped
2big garlic cloves,roughly chopped
⅓cup+ 1 Tbsp coconut milk,warm
3Tbspolive oil
1tspapple cider vinegar
1tspsea salt
¼tspground turmeric
¼tspground coriander
⅛tspground cinnamon
Black pepper to taste
Instructions
Add 2 inches of water to a large pot. Place a steamer basket into the pot. Bring water to a boil over high heat. Once it’s boiling, reduce heat to medium and add the cauliflower, onion and garlic cloves to the steamer basket. Cover with a lid. Steam until the cauliflower pieces are tender. About 10 – 15 minutes, depending on the size of the florets.
Add steamed cauliflower, onion, garlic cloves, coconut milk, olive oil, apple cider vinegar, sea salt, turmeric, coriander, cinnamon and black pepper to a food processor. Blend until smooth and creamy. Taste and adjust seasonings.
Serve immediately and enjoy!
You can make this in advance, store it in an air-tight container in the fridge and warm it up later.

*You can use the whole cauliflower: florets and stems.
