Herby Pea Hummus
Ingredients
- 1 cup cooked chickpeas
- 1 cup peas, I used cooked frozen peas (please don't use canned, they have a sad color and don't taste as good)
- 1 cup fresh basil leaves
- ⅓ cup fresh mint leaves
- 2 Tbsp olive oil
- 2 Tbsp tahini
- 2 Tbsp lemon juice
- 1 garlic clove
- ½ tsp lemon zest, tightly packed
- ½ tsp sea salt, or more to taste
- ¼ tsp ground coriander
Instructions
- Add all the ingredients to a food processor. Blend until smooth and creamy. Taste and adjust seasoning.
- Grab some crackers or a slice of bread and enjoy!
