Take your salads to the next level with this easy, quick and gorgeous Pomegranate Dressing. This healthy dressing is beyond delicious and couldn’t be any easier!

1 blender. 5 ingredients. Less than 5 minutes. That’s all it takes to make this luscious and incredibly tasty pomegranate vinaigrette. It’s vegan, paleo, dairy-free, sugar-free and so nutritious. I made this with whole pomegranate seeds, olive oil, apple cider vinegar, garlic and a touch of ginger. It’s absolutely delicious and it will boost the nutritional content of your meal.

This light, fruity, tangy and sweet vinaigrette is perfect for all your salads and Buddha bowls. I’m a huge salad dressing fan. I need dressings, I think a salad with no dressing is just a boring, unfinished meal. I don’t get people that don’t add dressings to their veggies (sorry, not sorry). To me, a good dressing is what makes a salad awesome, a good dressing will complement and enhance the salad ingredients’ flavor.

But why make your own salad dressing when you can buy one?! Because store-bought dressings are usually loaded with unhealthy ingredients like refined oils, sugars, additives and preservatives. Also, homemade salad dressings are easy, quick and cheaper than store-bought. And they can be loaded with health benefits. Like this vibrant pomegranate vinaigrette. Pomegranate Dressing

Light, fruity, tangy and super easy Pomegranate Vinaigrette. This healthy dressing is the perfect addition to your favorite salads and Buddha bowls. So nutritious and incredibly tasty.

Ingredients

  • 1 cup pomegranate seeds
  • ½ cup olive oil
  • 2 Tbsp apple cider vinegar*
  • 1 garlic clove, peeled
  • ¾ tsp ground ginger

Instructions

  • Place all the ingredients in a high-speed blender and blend until smooth and creamy.
  • Strain the mixture through a fine sieve and enjoy on your favorite salad!
  • Store in an airtight container in the fridge for 7 – 10 days.

Notes

*If you don’t have apple cider vinegar, you might want to try using balsamic vinegar. I haven’t tried this with balsamic vinegar yet, but I’m pretty sure it will be just as delicious.
